in between classes, cleaning my apartment, mandatory readings, and line learning this week, i decided to try out some new recipes - and were they ever delicious!
Spicy Pumpkin Hummus
1 can (540 mL) chickpeas, rinsed and drained well
2 garlic cloves, minced
1/4 cup (60 mL) each lemon juice and water
3 tbsp (45 mL) tahini
1/2 cup (125 mL) canned unsweetened pure pumpkin
1 tsp (5 mL) cumin
3/4 tsp (4 mL) salt
1/4 tsp (1 mL) cayenne or to taste
1/2 cup (80 mL) olive oil
Place chickpeas, garlic, lemon juice, water, and tahini in a food processor. Whirl until smooth. Add pumpkin and seasonings. Whirl. With motor running, drizzle in oil until well blended. Taste and add more lemon juice or cayenne if needed.
Makes 2 1/2 cups (625 mL) hummus.

Baked Sweet Potato
Wash, cut off the ends of the sweet potato(es) and bake in a preheated 400 degree F oven for 40 to 60 minutes (depending on the size of the potatoes and how firm you want them to be). Bake the potatoes on a baking sheet (I suggest adding a piece of parchment paper as a liner); the sugars in the potatoes can drip out and burn on the floor of your oven.
Top with sautéed brussels sprouts, toasted chopped pecans, crumbled goat cheese, and dried cranberries (use sparingly to avoid sugar overload!).
SO. GOOD.

WELL I’ve been back from Berlin for about a month and am just now starting to settle in again. Things on the acting front have been remarkably busy lately (yeahyeahyeah!), but all things social networking have fallen by the wayside. The good news? Please refrain from telling me that I’ve got glitter on my face/hands/clothes/etc. It’ll be flying around until June(ish).
